"To Your Health"  

This time of year we are mercilessly subjected to advertising and conflicting advice about nutrition and exercise.  Promises of effortless results and obscure diets can lead to disappointment and a sense of failure and frustration.   

Get Real!!  Better yet, get real food.  In a culture of convenience and consumption, we are losing our connection to the cycle of food that has been gift to us.  Our ancestors harvested the land and experienced food through hard work, celebration, and recycling.  My unsolicited advice for the New Year is to spend more time and dollars on real food.   

Real foods are vegetables, starches and meats that are not processed.  Processed foods are costly and designed to be profitable for companies at the expense of our health.  The global movement, “Slow Food” encourages us to reconnect with real food in many ways.  Plant a garden and/or buy local produce and meats.  Spend time preparing food with your family and making mealtime an enjoyable experience where you catch up with the ones you love.   

The investment in the right fuel for our bodies will lead to better health, a more enjoyable lifestyle and a greater sense of appreciation.  Why spend your money on health care later.

Adam Reed is Owner and Executive Chef at Sante Restaurant in Matthews, North Carolina.  Adam began working in the historic building in 1997 under the name “Hidden Garden” after responding to a job offer in the New York Times.   In 2001 Adam and wife Veronica bought the business, renaming it Sante, a reference to the French term “à votre santé”, translated as “To your Health”.  

 Before coming to the then quiet township of Matthews, Adam attended Manhattan College and obtained a business management degree.  He apprenticed at restaurants such as Rene Porjel’s, Maxim’s, and The Russian Tea Room.  While at The Russian Tea Room he rose from the humble beginning at a sauté station to the job of sous Chef under Executive Chef Paul Ingenito, pictured here to the right.

Adam delights in preparing good American food with the strong disciplines and techniques of the French tradition and claims that he is greatly influenced by his grandmother. 

You can find Adam most frequently at his restaurant, Sante, in the heart of Matthews but can also find him frequently at the Matthews Farmers Market and other venues such as Soups on Sunday in Charlotte.
