Translated from French this wine literally means, Field
of the Nuncio (ambassador), New house of the Pope. Châteauneuf-du-Pape was
a medieval village on the side of a hill, guarded by a chateau above.
Today from the ruins there is still an impressive view in all directions,
mostly of vineyards. With a deep ruby color, this peppery wine has accents of
black raspberry and chocolate. It is full bodied and chewy with soft
tannins. The exact varietal makeup of this wine is not publicized but it
is known that the following varietals contribute in part to the final
product: Cinsaut (Cinsault) Suggested pairings include both veal and lamb chops.
